Chicken & Vegetable Medley
I was home for the holidays and my mom made up this amazing dish with chicken & vegetables. It was so good that I had to re-create it at home here in Cali. Thanks mom. 🙂 Being on my teeth strengthening diet, I went with bone in, skin on chicken legs as they are more fatty than your regular chicken breast and offer fat-soluble vitamins that are beneficial in helping absorb vital minerals as well as helping strengthen teeth, whiten teeth naturally & prevent tooth decay.
I am all for easy, nourishing meals. This is one of them. Set it in the over and forget it, takes like 5 minutes to prep and it is DELISH. Hope you love it as much as I did!
Ingredients:
2 Pastured or Organic chicken legs (bone-in, with skin)
Carrots
Baby potatoes
Asparagus
1/2 an onion
3 tablespoon duck fat (I used this one from Epic Provisions)
Lemon slices
Sea Salt
Pepper
Paleo seasoning from Sprouts
How to Make It:
1. Preheat oven to 375F
2. Place chicken legs on backing sheet
3. Chop vegetables and place on baking sheet. Slice onion shin and add.
4. Cover with duck fat, sea salt, pepper and sprouts paleo seasoning.
5. Mix veggies around so they are well coated and add lemon slices to chicken legs.
6. Bake for 40 – 45 minutes until chicken is cooked through
7. Pair with a side salad with sauerkraut, coconut water kefir or some raw milk for extra probiotics!
