Basic Beef Soup
I like a good soup and I like it made easy. This is a play off of my Spicy Turkey Soup – but it’s a little more fatty and rich from the beef so it’s delish for the cold weather & good for getting your healthy fats in too. I highly recommend Grass-fed meat as it’s cleaner, has no antibiotics & hormones in it like conventional meat, has a higher amount of beneficial fats for our bodies and the animals are of course treated and grown how nature intended them to be. Good for the animal, good for the Earth, good for us.
The longer this soup simmers, the better – so if you’re at home for the day and make this, just let it simmer over the stove if you can to really cook down the stew meat and make the flavors really come alive.
It’s amazing reheated over the stove and you can even add frozen peas or frozen cauliflower rice to zhuzh it up – that is what I did and I am eating it as I write this & it’s so good. Oh, also, dip bread it in. Okay here you go enjoy! xo
Ingredients:
1 pound Grass-fed Stew Meat
3 tablespoon of Ghee (or butter/oil) to coat pot
4 medium sized loose Carrots chopped thin
4 stalks of Celery chopped thin
4-5 Kale leaves
Juice from 1/2 a Lemon
6 cups Water (or Beef Broth)
Any frozen veggies you wanna add, add and it’ll be delicious I am sure
Spices I used: Use whatever you have on hand and like!
2 teaspoons Sea Salt
1/2 teaspoon Black Pepper
1 teaspoon Garlic Powder
1/4 teaspoon Cumin
2 tablespoons Nutritional Yeast
1/4 teaspoon Turmeric
Steps:
- Chop onion, carrots and celery.
- Heat a pot to low heat and add ghee.
- Add in onions, carrots & celery and let sauté for about 5 minutes.
- Add stew meat and let sauté for another 5 minutes.
- Add in water and spices and bring to a boil.
- Once it’s boiling, turn down to low/simmer and cover it and let simmer for 35 minutes.
- While its covered, chop (or break apart with your hands) the kale excluding the hard stems.
- After the 30 minutes, taste it! Add more spices to your preferred taste and make sure the veggies are cooked through to your liking.
- Once you have done that, add in the small pieces of kale & lemon juice, cover and cook for about 10 more minutes.
- Simmer as long as you want to make the stew meat get even softer – I let mine simmer for like an hour if I can. Enjoy!
